What to cook with mushrooms
Mushrooms are about eighty per cent water, and that water is why home-cooked mushrooms are usually grey and rubbery instead of brown and meaty.
Sear them in a dry pan first, with no oil and no crowding. Wait for the water to come out and fully evaporate, and only then add fat. That is the entire technique and it takes five minutes.
Worth knowing: Do not wash them under a tap. Wipe them, or they absorb water and never brown.
