Mushrooms cook in ten minutes and taste like you tried much harder.

25 min Some work Vegetarian

Ingredients

  • 400g mushrooms, halved
  • 2 onions, chopped
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/2 tsp kasuri methi
  • 3 tbsp oil

Method

  1. Sear the mushrooms in a dry hot pan first — no oil — until they release their water and it evaporates. This is the difference between good and soggy.
  2. Add oil, then onions, cook till golden.
  3. Ginger-garlic paste, tomatoes, powders and salt. Cook till thick.
  4. Return the mushrooms, splash of water, 5 minutes.
  5. Kasuri methi and garam masala at the end.

Questions people ask about Mushroom Masala

How long does Mushroom Masala take?

About 25 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of onion in Mushroom Masala?

Use shallots, which are sweeter, or leeks for a milder result. Neither browns quite as deeply.

Can I make Mushroom Masala ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Mushroom Masala vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Mushroom Masala?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
