Oats Chilla

Blender, pan, plate. Fifteen minutes and it's genuinely high protein.

15 min Easy Vegetarian

Ingredients

  • 1 cup rolled oats
  • 1/2 cup besan
  • 1/4 cup curd
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 carrot, grated
  • 2 green chillies
  • 1/2 tsp turmeric
  • 1/2 tsp ajwain
  • Coriander
  • Oil

Method

  1. Blend the oats into a coarse flour.
  2. Whisk with besan, curd, turmeric, ajwain, salt and water into a pouring batter. Rest 10 minutes — it thickens, so keep water handy.
  3. Stir in the vegetables and coriander.
  4. Medium tawa, ladle, spread into a circle.
  5. Oil around the edges. Flip when the top looks dry, 2 minutes more.
  6. Green chutney or curd.

Questions people ask about Oats Chilla

How long does Oats Chilla take?

About 15 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of besan in Oats Chilla?

Use chickpea flour is the same thing. At a push, rice flour binds but will not taste the same.

Can I make Oats Chilla ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Oats Chilla vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Oats Chilla?

Green chutney or curd. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
