Saffron Fromage

Yogurt, cream cheese, saffron and cardamom. Five minutes, no heat at all.

10 min Easy Vegetarian No oven needed

Ingredients

  • 250g natural yogurt
  • 250g soft cream cheese
  • 110g icing sugar
  • 1 tsp cardamom powder
  • A few strands saffron
  • 10 tbsp hot milk

Method

  1. Steep the saffron in the hot milk until the milk turns properly yellow.
  2. Blend everything together until completely smooth.
  3. Chill for at least an hour — it needs the time to set and for the cardamom to come forward.
  4. Add 50g mango pulp and a knob of butter and it becomes mango fromage.

Questions people ask about Saffron Fromage

How long does Saffron Fromage take?

About 10 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of curd in Saffron Fromage?

Use thick Greek yogurt, or regular yogurt hung in a cloth for 20 minutes. Thin yogurt splits more easily, so always take the pan off the heat first.

Can I make Saffron Fromage ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Saffron Fromage vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make Saffron Fromage without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.

What do you serve with Saffron Fromage?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
