Creamed Mushrooms

Twenty minutes to something you'll want on toast, in a roll, or straight from the pan.

20 min Easy Vegetarian

Ingredients

  • 3 cups mushrooms, chopped
  • 1/2 cup butter
  • 1/2 cup milk
  • 1/2 cup cream
  • 1/2 cup cheddar, grated
  • 1/2 cup yogurt
  • 1 onion, chopped
  • A pinch of mustard powder
  • Salt and pepper

Method

  1. Sauté the onion and mushrooms in butter for 8 minutes on low. Let the water they release cook off completely.
  2. Milk in, bring to a boil, then the cheese until it melts.
  3. Cream, yogurt, mustard, salt and pepper. Stir for a minute and take it off — boiling after the yogurt goes in will split it.
  4. Eat with roti, on toast, or spooned into a bread roll.

Questions people ask about Creamed Mushrooms

How long does Creamed Mushrooms take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of cream in Creamed Mushrooms?

Use full-fat coconut milk for a dairy-free version, or whole milk thickened with 1 tsp cornflour. Neither is as stable, so add them off the heat.

Can I make Creamed Mushrooms ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Creamed Mushrooms vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Creamed Mushrooms?

Eat with roti, on toast, or spooned into a bread roll. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
