Chinese Chop Suey

Everything crunchy in one pan under a glossy sauce. Dinner in twenty minutes.

20 min Easy Vegetarian

Ingredients

  • 2 stalks celery, sliced
  • 2 carrots, in matchsticks
  • 2 onions, sliced thick
  • 1 cup mushrooms, halved
  • 1 cup bamboo shoots or cabbage, shredded
  • 2 tbsp soy sauce
  • 1 tsp cornflour in 1/2 cup water
  • 2 tbsp oil
  • Black pepper

Method

  1. Get the pan properly hot before anything goes in. This is a stir-fry, not a stew.
  2. Onion, carrot, celery — two minutes, tossing. They should still fight back when you bite them.
  3. Mushrooms and bamboo shoots, two more minutes.
  4. Soy sauce, salt, a lot of pepper. Then the cornflour water.
  5. Simmer stirring until the sauce turns clear and coats a spoon — about a minute. Stop there; longer and the vegetables go limp.

Questions people ask about Chinese Chop Suey

How long does Chinese Chop Suey take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

Can I make Chinese Chop Suey ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Chinese Chop Suey vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Chinese Chop Suey?

On its own as a main, or with fried rice or noodles. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
