Schezwan Fried Rice

Louder than normal fried rice, same twenty minutes.

20 min Easy Vegetarian

Ingredients

  • 3 cups cold cooked rice
  • 3 tbsp schezwan sauce
  • 1 cup cabbage, shredded
  • 1 capsicum
  • 1 carrot
  • 8 garlic cloves
  • 1 tbsp soy sauce
  • 1 tsp vinegar
  • Spring onion
  • 3 tbsp oil

Method

  1. Cold rice, separated. Highest heat you have.
  2. Garlic 20 seconds, then all the vegetables 2-3 minutes — still crunchy.
  3. Schezwan sauce in, fry it for 30 seconds so it stops tasting raw.
  4. Rice in, toss and press for 3 minutes. Soy and vinegar down the sides.
  5. Spring onion. Fried egg on top if you want.

Questions people ask about Schezwan Fried Rice

How long does Schezwan Fried Rice take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of rice in Schezwan Fried Rice?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Schezwan Fried Rice ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Schezwan Fried Rice vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Schezwan Fried Rice?

On its own as a main, or with fried rice or noodles. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
