Sweet Corn Soup

Fifteen minutes, mostly from a can, and it's the one children ask for.

18 min Easy Vegetarian

Ingredients

  • 2 cups sweet corn (half blended, half whole)
  • 1 carrot, finely diced
  • 1/2 cup beans and cabbage, finely diced
  • 3 tbsp cornflour
  • 5 cups stock or water
  • 1 tsp sugar
  • 1 tsp white pepper
  • 1 tbsp butter
  • Spring onion

Method

  1. Blend half the corn with a little water into a rough puree. The other half stays whole — you want both textures.
  2. Butter in a pot, the diced vegetables for 3 minutes.
  3. Stock, corn puree, whole corn, sugar and salt. Boil 6 minutes.
  4. Cornflour whisked into cold water, then stirred in slowly until it thickens and turns glossy.
  5. White pepper — not black, it matters for the taste.
  6. Spring onion. Vinegar and chilli sauce on the table.

Questions people ask about Sweet Corn Soup

How long does Sweet Corn Soup take?

About 18 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

Can I make Sweet Corn Soup ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Sweet Corn Soup vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Sweet Corn Soup?

On its own as a main, or with fried rice or noodles. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
