Hot and Sour Soup

Twenty minutes and it clears your head. Sharp, peppery and thick.

20 min Easy Vegetarian

Ingredients

  • 1 cup mushrooms, sliced
  • 2 cups vegetables (cabbage, carrot, beans, capsicum), thin strips
  • 8 garlic cloves, 1 inch ginger, minced
  • 3 tbsp cornflour
  • 2 tbsp soy sauce
  • 3 tbsp vinegar
  • 1 tbsp chilli sauce
  • 1 tsp black pepper
  • 5 cups stock
  • 1 tbsp oil

Method

  1. Cut every vegetable into thin matchsticks. This soup is about texture in every spoonful.
  2. Garlic and ginger in oil, 20 seconds, then mushrooms till their water evaporates.
  3. Vegetables, 2 minutes on high.
  4. Stock, soy, chilli sauce and salt. Boil 5 minutes.
  5. Cornflour slurry in, stirring, till it thickens.
  6. Vinegar and pepper OFF the heat — boiling vinegar loses the sourness that gives the soup its name.

How long does Hot and Sour Soup take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

Can I make Hot and Sour Soup ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Hot and Sour Soup vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Hot and Sour Soup?

On its own as a main, or with fried rice or noodles. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
