25 min Some work Vegetarian

Ingredients

  • 300g mushrooms, halved
  • 200g prawns or tofu
  • 4 cups stock or water
  • 2 stalks lemongrass, bruised (or 2 tbsp lemon zest)
  • 6 kaffir lime leaves or 1 tbsp lime zest
  • 1 inch galangal or ginger, sliced
  • 4 green chillies, crushed
  • 3 tbsp lemon juice
  • 2 tbsp soy or fish sauce
  • 1 tbsp chilli paste
  • Coriander

Method

  1. Simmer the stock with lemongrass, lime leaves, galangal and crushed chillies for 10 minutes. Don't eat these, they're for flavour.
  2. Mushrooms, 5 minutes.
  3. Prawns or tofu, 3 minutes.
  4. Take it OFF the heat, then add lemon juice, soy and chilli paste. Boiling lemon juice makes it bitter.
  5. Taste and push it — it should be aggressively sour and salty, not gentle.
  6. Coriander. Rice on the side.

Questions people ask about Tom Yum

How long does Tom Yum take?

About 25 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Tom Yum?

Simmer the stock with lemongrass, lime leaves, galangal and crushed chillies for 10 minutes. Don't eat these, they're for flavour.

What can I use instead of lemon in Tom Yum?

Use lime, or 1 tsp vinegar in a pinch. Add acid off the heat either way.

Can I make Tom Yum ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Tom Yum vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Tom Yum?

Rice on the side. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
