Pineapple Fried Rice

Served in the hollowed-out pineapple, because why not.

30 min Some work Vegetarian

Ingredients

  • 1 fresh pineapple
  • 3 cups cooked rice, cold
  • 1/2 cup peas
  • 1/2 cup carrots, parboiled and diced
  • 1 onion, chopped
  • 3 spring onions, chopped
  • 2 tbsp soy sauce
  • 4 tbsp oil
  • Salt and pepper

Method

  1. Cut a third off the pineapple lengthways, scoop the flesh out and dice a cupful. Stand the shell upside down to drain.
  2. Use cold, day-old rice. Fresh rice turns to porridge in a wok.
  3. Fry the onion, then carrot and peas until tender.
  4. Rice in, fry hard, then the pineapple, soy sauce, salt and pepper.
  5. Spoon into the shell and take the whole thing to the table.

Questions people ask about Pineapple Fried Rice

How long does Pineapple Fried Rice take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of rice in Pineapple Fried Rice?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Pineapple Fried Rice ahead of time?

Not really. This one relies on being crisp, and crisp does not survive the fridge. Prepare the components ahead if you like, but cook it just before eating.

Is Pineapple Fried Rice vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Pineapple Fried Rice?

Jasmine rice. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
