Som Tam

Green papaya salad. No cooking, ten minutes, and it wakes up any meal.

15 min Easy Vegetarian

Ingredients

  • 1 green papaya, shredded (or raw mango + carrot)
  • 4 garlic cloves
  • 4 green chillies
  • 2 tbsp peanuts
  • 2 tbsp palm sugar or jaggery
  • 3 tbsp lime juice
  • 2 tbsp fish or soy sauce
  • 10 green beans, cut short
  • 6 cherry tomatoes

Method

  1. Pound the garlic and chillies in a mortar first, into a rough paste.
  2. Add peanuts and beans, bruise them lightly — bruised, not crushed.
  3. Sugar, lime and fish sauce, pounded until the sugar dissolves.
  4. Tomatoes, squashed just enough to release juice.
  5. Shredded papaya in last. Now bruise and turn with a spoon rather than pounding, so it stays crunchy.
  6. Taste — it must be sour first, then salty, sweet and hot. Eat within the hour.

Questions people ask about Som Tam

How long does Som Tam take?

About 15 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of lemon in Som Tam?

Use lime, or 1 tsp vinegar in a pinch. Add acid off the heat either way.

Can I make Som Tam ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Som Tam vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Som Tam?

Jasmine rice. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
