Pad Krapow

Thai basil stir fry with a fried egg. Fifteen minutes, the fastest big-flavour dinner here.

18 min Easy Contains egg

Ingredients

  • 400g chicken mince, or 300g crumbled tofu
  • 2 cups holy basil or normal basil
  • 8 garlic cloves
  • 4 green chillies
  • 2 tbsp soy sauce
  • 1 tbsp oyster or dark soy sauce
  • 1 tsp sugar
  • 2 eggs
  • Rice for 2
  • 3 tbsp oil

Method

  1. Pound the garlic and chillies together coarsely. A blender makes it watery.
  2. Screaming hot pan. Garlic-chilli for 20 seconds.
  3. Mince in, break it up, fry hard 5 minutes until it browns and catches slightly.
  4. Soy sauces and sugar, toss 1 minute.
  5. Heat off, then a huge handful of basil folded through — it should wilt, not cook.
  6. Fry the eggs in very hot oil till the edges are crisp and lacy. Rice, mince, egg on top.

Questions people ask about Pad Krapow

How long does Pad Krapow take?

About 18 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of soy sauce in Pad Krapow?

Use tamari if you need it gluten-free. Dark soy is saltier, so use less.

Can I make Pad Krapow ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

What do you serve with Pad Krapow?

Rice, mince, egg on top. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
