Stuffed Mushrooms

Twenty-five minutes, looks like a restaurant starter, works as a light dinner.

30 min Some work Vegetarian

Ingredients

  • 16 large mushrooms
  • 1 cup grated cheese
  • 1/2 cup breadcrumbs
  • 6 garlic cloves
  • 1 onion, finely chopped
  • 1/4 cup parsley or coriander
  • 2 tbsp butter
  • 1 tsp chilli flakes
  • Olive oil

Method

  1. Pull the stems out and chop them finely — they go in the filling, not the bin.
  2. Cook the chopped stems with onion and garlic in butter until every bit of water has gone. Wet filling floods the caps.
  3. Off the heat, mix in breadcrumbs, half the cheese, herbs, chilli flakes, salt and pepper.
  4. Rub the caps with olive oil and salt, sit them hollow side up.
  5. Fill generously, rest of the cheese on top.
  6. 200°C for 18 minutes till browned and bubbling. Rest 5 minutes — the insides are molten.

Questions people ask about Stuffed Mushrooms

How long does Stuffed Mushrooms take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of cheese in Stuffed Mushrooms?

Use any hard cheese that melts. Processed cheese melts smoothest, aged cheese tastes better.

Can I make Stuffed Mushrooms ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Stuffed Mushrooms vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Stuffed Mushrooms?

Bread, potatoes or a simple salad. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
