Japchae

Glass noodles with vegetables, served warm or cold. Good for a crowd and it holds.

35 min Some work Vegetarian

Ingredients

  • 250g sweet potato glass noodles
  • 2 cups spinach
  • 2 carrots, julienned
  • 1 onion, sliced
  • 1 cup mushrooms
  • 1 capsicum
  • Sauce: 4 tbsp soy, 2 tbsp sugar, 2 tbsp sesame oil, 4 garlic cloves
  • Sesame seeds
  • 1 egg (optional)

Method

  1. Boil the noodles 6 minutes, rinse cold, then cut them roughly with scissors so they're eatable.
  2. Toss the noodles immediately with half the sauce while warm. They absorb it now and won't later.
  3. Cook each vegetable separately on high with a little sesame oil and salt. Together they'd steam and go limp.
  4. Blanch and squeeze the spinach.
  5. Combine everything with the rest of the sauce, mixing with your hands.
  6. Sesame seeds. Good warm, better at room temperature.

Questions people ask about Japchae

How long does Japchae take?

About 35 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of noodles in Japchae?

Use any wheat or rice noodle. Rice noodles soak rather than boil, so read the packet.

Can I make Japchae ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Japchae vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Japchae?

Rice and kimchi. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
