Gyeran Mari

A rolled Korean egg loaf with vegetables through it. Looks impressive, takes fifteen minutes.

18 min Some work Contains egg

Ingredients

  • 5 eggs
  • 1 carrot, very finely diced
  • 2 spring onions, finely sliced
  • 1/4 capsicum, finely diced
  • 1 tsp sesame oil
  • Salt
  • Oil

Method

  1. Beat the eggs and strain them through a sieve. That one step is what makes the roll smooth instead of lumpy.
  2. Stir in the finely diced vegetables and salt. Everything must be tiny or the roll won't hold.
  3. Lightly oiled pan on LOW. Pour a third of the mix in, tilt to spread thin.
  4. When the top is nearly set but still tacky, roll it from one side to the other with a spatula.
  5. Push the roll to one end, pour in more egg, lifting the roll so the new egg runs underneath. Roll again. Repeat.
  6. Cool 2 minutes, then slice into rounds. Sesame oil and seeds.
