Tteokbokki

Chewy rice cakes in a sweet chilli sauce. Twenty minutes and unlike anything else here.

20 min Easy Vegetarian

Ingredients

  • 500g rice cakes (tteok)
  • 3 tbsp gochujang
  • 1 tbsp chilli powder
  • 2 tbsp sugar
  • 1 tbsp soy sauce
  • 3 cups stock or water
  • 1 onion, sliced
  • 2 eggs, boiled
  • Spring onion
  • Sesame seeds

Method

  1. Soak the rice cakes in warm water 20 minutes if they're hard or frozen.
  2. Stock, gochujang, chilli powder, sugar and soy in a wide pan. Bring to a boil and whisk smooth.
  3. Rice cakes and onion in.
  4. Simmer 12 minutes, stirring often so they don't stick to the base. The sauce thickens as the cakes release starch — that's the thickening, no flour needed.
  5. They're ready when chewy but not hard in the middle.
  6. Boiled egg halves, spring onion, sesame seeds.

Questions people ask about Tteokbokki

How long does Tteokbokki take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What is the one thing to get right in Tteokbokki?

Simmer 12 minutes, stirring often so they don't stick to the base. The sauce thickens as the cakes release starch — that's the thickening, no flour needed.

What can I use instead of rice in Tteokbokki?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Tteokbokki ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Tteokbokki vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Tteokbokki?

Rice and kimchi. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
