Mushroom Vol au Vents

Pastry cases from a packet, creamy mushrooms inside. Effortless and people are impressed.

25 min Easy Vegetarian

Ingredients

  • 1 cup mushrooms, chopped
  • 4 tbsp white sauce
  • 1 pack vol au vent cases or puff pastry
  • 4 tbsp melted butter
  • 2 garlic cloves, minced
  • 4 tbsp sour cream
  • 4 tbsp cheese, grated
  • Parsley
  • Salt and pepper

Method

  1. Fry the garlic and mushrooms in butter until the pan is dry, not wet. Wet filling makes soggy pastry.
  2. White sauce, sour cream, salt and pepper. Heat through.
  3. Fill the cases, cheese on top.
  4. Grill a few minutes until it bubbles. Parsley and serve hot — they go soft as they cool.

Questions people ask about Mushroom Vol au Vents

How long does Mushroom Vol au Vents take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of cream in Mushroom Vol au Vents?

Use full-fat coconut milk for a dairy-free version, or whole milk thickened with 1 tsp cornflour. Neither is as stable, so add them off the heat.

Can I make Mushroom Vol au Vents ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Mushroom Vol au Vents vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Mushroom Vol au Vents?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Mushroom Vol au Vents?

Parsley and serve hot — they go soft as they cool. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
