Mushroom Tart

Puff pastry, mushrooms, cheese. Twenty minutes of work.

45 min Easy Vegetarian

Ingredients

  • 1 sheet puff pastry
  • 500g mushrooms, sliced
  • 6 garlic cloves
  • 1 onion, sliced
  • 1 cup grated cheese or 150g soft cheese
  • 2 tbsp butter
  • Thyme or oregano
  • 1 egg to glaze

Method

  1. Sear the mushrooms in a dry hot pan first until all their water has gone, then add butter, garlic and onion. Wet mushrooms make puff pastry collapse.
  2. Cool the mixture completely. Hot filling melts the butter layers before they can puff.
  3. Score a 2cm border around the pastry without cutting through, and prick the inside all over with a fork so only the border rises.
  4. Cheese, then mushrooms, inside the border.
  5. Egg wash the border. 200°C for 22-25 minutes until deep golden and puffed.
  6. Herbs on top. Salad on the side.

Questions people ask about Mushroom Tart

How long does Mushroom Tart take?

About 45 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of cheese in Mushroom Tart?

Use any hard cheese that melts. Processed cheese melts smoothest, aged cheese tastes better.

Can I make Mushroom Tart ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Mushroom Tart vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Mushroom Tart?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Mushroom Tart?

Salad on the side. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
