Cornbread

No yeast, no rising, no waiting. In the oven within ten minutes.

35 min Easy Vegetarian

Ingredients

  • 1.5 cups cornmeal or makki ka atta
  • 1 cup maida
  • 2 tsp baking powder
  • 1/2 tsp soda
  • 2 tbsp sugar
  • 1.5 cups buttermilk or curd + milk
  • 2 eggs or 1/2 cup curd
  • 1/2 cup melted butter
  • 1 cup corn kernels
  • 2 green chillies (optional)

Method

  1. Put a cast iron pan or tin in the oven with 2 tbsp butter while it preheats to 200°C. Pouring batter into a hot buttered pan is what gives the crisp fried crust.
  2. Dry in one bowl, wet in another.
  3. Combine with a few stirs only. Lumpy batter, as with muffins.
  4. Corn and chillies folded in.
  5. Pour into the hot pan — it should sizzle — and straight back into the oven.
  6. 25 minutes until golden and springy. Butter and honey.

Questions people ask about Cornbread

How long does Cornbread take?

About 35 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Cornbread?

Put a cast iron pan or tin in the oven with 2 tbsp butter while it preheats to 200°C. Pouring batter into a hot buttered pan is what gives the crisp fried crust.

What can I use instead of maida in Cornbread?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Cornbread ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Cornbread vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Cornbread?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Cornbread?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
