Blueberry Muffins

Thirty-five minutes, and frozen berries work as well as fresh.

35 min Easy Vegetarian

Ingredients

  • 2 cups maida
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1 cup blueberries (or any berry)
  • 1 cup milk or buttermilk
  • 1/2 cup melted butter
  • 1 egg or 1/4 cup curd
  • Zest of 1 lemon
  • 2 tbsp demerara sugar for the top

Method

  1. Toss the berries in a spoonful of the flour. Frozen ones go in straight from the freezer — thawed berries bleed and turn the batter grey.
  2. Dry in one bowl, wet in another.
  3. Combine with about ten stirs. Lumpy is right.
  4. Fold the berries through with two turns.
  5. Cases three-quarters full, demerara sugar on top for crunch.
  6. 200°C for 5 minutes, then 180°C for 16.

Questions people ask about Blueberry Muffins

How long does Blueberry Muffins take?

About 35 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of maida in Blueberry Muffins?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Blueberry Muffins ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Blueberry Muffins vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Blueberry Muffins?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Blueberry Muffins?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
