Twenty minutes of stirring and you get something genuinely special.

40 min A proper cook Vegetarian

Ingredients

  • 1.5 cups arborio or short rice
  • 400g mushrooms, sliced
  • 1 onion, very finely chopped
  • 4 garlic cloves
  • 6 cups hot vegetable stock or water
  • 1/2 cup grated parmesan
  • 3 tbsp butter
  • Black pepper

Method

  1. Sear the mushrooms hard in a dry pan first, then with butter and garlic. Set aside.
  2. Soften the onion in butter, add rice, toast 2 minutes till the edges go translucent.
  3. Add hot stock ONE ladle at a time, stirring, waiting until it's absorbed before the next.
  4. Keep going 18-20 minutes. Taste — the grain should have the faintest bite left.
  5. Off the heat: mushrooms, butter, parmesan, beaten in hard. That's what makes it creamy.
  6. Loose enough to spread slowly on the plate. Pepper on top.

Questions people ask about Mushroom Risotto

How long does Mushroom Risotto take?

About 40 minutes from starting to sitting down, and it is a proper cook. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of rice in Mushroom Risotto?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Mushroom Risotto ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Mushroom Risotto vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Mushroom Risotto?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
