Comfort in a bowl. Kids and adults both shut up and eat it.

30 min Some work Vegetarian

Ingredients

  • 250g pasta
  • 3 tbsp butter
  • 3 tbsp maida
  • 3 cups milk
  • 1 cup grated cheese
  • 1 capsicum + 1 cup corn/broccoli
  • 4 garlic cloves
  • Black pepper, oregano, chilli flakes

Method

  1. Boil the pasta. Sauté the vegetables with garlic separately, keep aside.
  2. Melt butter, add maida, cook 2 minutes stirring — it should smell nutty, not raw.
  3. Add milk a splash at a time, whisking. Keep going until it's smooth and coats a spoon.
  4. Salt, pepper, oregano, cheese. Off the heat so it doesn't split.
  5. Fold in pasta and veg. Loosen with milk if it thickens.

Questions people ask about White Sauce Pasta

How long does White Sauce Pasta take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of pasta in White Sauce Pasta?

Use any short shape holds sauce better than long; cooking time changes, so go by the packet.

Can I make White Sauce Pasta ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is White Sauce Pasta vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with White Sauce Pasta?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
