Gnocchi in Tomato Butter Sauce

Fifteen minutes if you buy the gnocchi. Three ingredients in the sauce.

20 min Easy Vegetarian

Ingredients

  • 500g gnocchi (shop-bought is fine)
  • 1 can tomatoes
  • 1 onion, halved
  • 60g butter
  • Basil
  • Parmesan
  • Salt

Method

  1. Sauce: tomatoes, butter, the onion halves and salt in a pan. Simmer 20 minutes, no stirring needed.
  2. Fish out the onion at the end. That's the entire sauce and it's better than most.
  3. Boil the gnocchi. They're done the moment they float — about 90 seconds. Overcooked gnocchi turns to glue.
  4. Straight into the sauce with a spoonful of the cooking water.
  5. Basil and parmesan. For crisp edges, pan-fry the boiled gnocchi in butter first.
