Bruschetta

Good bread, ripe tomatoes, ten minutes. Nothing to hide behind.

12 min Easy Vegetarian

Ingredients

  • 1 crusty loaf, in thick slices
  • 6 ripe tomatoes, diced
  • 4 garlic cloves, whole
  • A big handful of basil
  • 5 tbsp olive oil
  • 1 tsp vinegar
  • Salt, black pepper

Method

  1. Dice the tomatoes, salt them, and leave them in a sieve for 10 minutes. Draining that water is what stops soggy bread.
  2. Toast or grill the bread until properly charred at the edges.
  3. Rub a raw garlic clove hard over the hot toast. The rough surface grates it — this is the whole technique.
  4. Olive oil over the toast, generously.
  5. Mix the drained tomatoes with torn basil, olive oil, vinegar and pepper.
  6. Spoon on top and eat immediately. It goes soft within minutes.

Questions people ask about Bruschetta

How long does Bruschetta take?

About 12 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What is the one thing to get right in Bruschetta?

Dice the tomatoes, salt them, and leave them in a sieve for 10 minutes. Draining that water is what stops soggy bread.

What can I use instead of bread in Bruschetta?

Use any loaf that is a day old. Fresh bread turns to paste in most of these.

Can I make Bruschetta ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Bruschetta vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Bruschetta?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
