Panzanella

Stale bread turned into a salad. No cooking, fifteen minutes, better after it sits.

20 min Easy Vegetarian

Ingredients

  • 4 cups stale crusty bread, torn into chunks
  • 6 very ripe tomatoes
  • 1 cucumber
  • 1 red onion, thin slices
  • A handful of basil
  • 1/2 cup olive oil
  • 3 tbsp vinegar
  • 2 garlic cloves
  • Salt, black pepper

Method

  1. Tear the bread rather than cutting it. Torn edges soak up dressing; cut ones stay smooth.
  2. Toast the chunks in the oven or a dry pan till dry and golden at the edges.
  3. Cut the tomatoes over a bowl so you catch every drop of juice. That juice is half the dressing.
  4. Whisk the tomato juice with olive oil, vinegar, crushed garlic, salt and pepper.
  5. Toss bread, tomatoes, cucumber, onion and dressing together.
  6. Rest 20 minutes so the bread softens but keeps some chew. Basil at the end.

Questions people ask about Panzanella

How long does Panzanella take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of bread in Panzanella?

Use any loaf that is a day old. Fresh bread turns to paste in most of these.

Can I make Panzanella ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Panzanella vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Panzanella?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
