Pasta e Fagioli

Pasta and beans in one pot. Peasant food that costs almost nothing and fills you completely.

35 min Easy Vegetarian

Ingredients

  • 1.5 cups small pasta
  • 2 cans white beans or rajma
  • 1 onion, 2 carrots, 2 celery sticks, finely diced
  • 6 garlic cloves
  • 1 can tomatoes
  • 5 cups stock
  • 1 sprig rosemary
  • Parmesan rind if you have one
  • Olive oil

Method

  1. Cook the diced onion, carrot and celery slowly in olive oil for 10 minutes. This base is doing all the work — don't rush it.
  2. Garlic and rosemary, 1 minute.
  3. Tomatoes, stock, half the beans, and the parmesan rind. Simmer 15 minutes.
  4. Blend the other half of the beans with a ladle of broth and stir it in. That's what makes it creamy without cream.
  5. Pasta cooked directly in the pot, 10 minutes, stirring so it doesn't stick.
  6. Thick enough that a spoon stands up. Olive oil and pepper on top.

About 35 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Pasta e Fagioli?

Cook the diced onion, carrot and celery slowly in olive oil for 10 minutes. This base is doing all the work — don't rush it.

What can I use instead of pasta in Pasta e Fagioli?

Use any short shape holds sauce better than long; cooking time changes, so go by the packet.

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Pasta e Fagioli?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
