Minestrone

Whatever vegetables are dying in the drawer, plus beans and pasta. One pot.

40 min Easy Vegetarian

Ingredients

  • 1 onion, 2 carrots, 2 celery sticks, diced
  • 3 cups other vegetables (beans, courgette, potato, cabbage)
  • 1 can white beans or rajma
  • 1 can tomatoes
  • 1 cup small pasta
  • 6 garlic cloves
  • 6 cups stock
  • Parmesan rind
  • Basil or parsley
  • Olive oil

Method

  1. Onion, carrot and celery in olive oil for 10 minutes on low. Salt them early so they sweat rather than fry.
  2. Garlic, then the harder vegetables, 5 minutes.
  3. Tomatoes, stock, beans and the parmesan rind. Simmer 20 minutes.
  4. Softer vegetables and pasta in for the last 10 minutes.
  5. Fish the rind out. It should be thick — a soup you eat with a fork.
  6. Olive oil, grated cheese, torn basil. Better the next day.

Questions people ask about Minestrone

How long does Minestrone take?

About 40 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of rajma in Minestrone?

Use canned kidney beans, rinsed. Skip straight to the gravy step.

Can I make Minestrone ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Minestrone vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Minestrone?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
