30 min Some work Vegetarian

Ingredients

  • 3 cups cooked short grain rice, still warm
  • 1/4 cup rice vinegar
  • 3 tbsp sugar
  • 1 tbsp salt
  • Soy sauce
  • Wasabi or grated horseradish
  • Shiitake mushrooms, cooked, for topping
  • Cucumber, avocado or blanched vegetables for topping

Method

  1. Mix the vinegar, salt and sugar until dissolved and pour it over the warm rice.
  2. Cut it in with a flat spoon — cut, don't stir, or you crush the grains to paste.
  3. Keep the rice covered with a damp cloth while you work. It dries out fast.
  4. Wet your palm, press a tablespoon of rice into a block, top it, and set it on the plate.
  5. Soy sauce with a little wasabi stirred in, as a dip.

Questions people ask about Sushi Rice Bites

How long does Sushi Rice Bites take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Sushi Rice Bites?

Cut it in with a flat spoon — cut, don't stir, or you crush the grains to paste.

What can I use instead of rice in Sushi Rice Bites?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Sushi Rice Bites ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Sushi Rice Bites vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Sushi Rice Bites?

Steamed rice and pickles. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
