Miso Soup + Rice

Ten minutes, barely any cooking, and it settles everything.

12 min Easy Vegetarian

Ingredients

  • 3 tbsp miso paste
  • 4 cups water or dashi
  • 200g soft tofu, cubed
  • 2 tbsp dried seaweed (wakame), soaked
  • Spring onion
  • 1 tsp soy sauce
  • Rice for 2

Method

  1. Heat the water. Don't boil it hard.
  2. Put the miso in a ladle, add a little hot water and whisk it smooth before it goes in the pot. Lumps otherwise.
  3. Stir the dissolved miso in and take the pot off the heat. Boiling miso kills the flavour and the good bacteria.
  4. Tofu and soaked seaweed in, 1 minute to warm through.
  5. Spring onion, a drop of soy. Rice alongside, pickles if you have them.

Questions people ask about Miso Soup + Rice

How long does Miso Soup + Rice take?

About 12 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What is the one thing to get right in Miso Soup + Rice?

Heat the water. Don't boil it hard.

What can I use instead of tofu in Miso Soup + Rice?

Use paneer, cubed the same size. It browns faster, so drop the heat slightly.

Can I make Miso Soup + Rice ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Miso Soup + Rice vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Miso Soup + Rice?

Rice alongside, pickles if you have them. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
