25 min Some work Contains egg

Ingredients

  • 3 cups cold cooked rice
  • 6 eggs
  • 1 onion, finely diced
  • 1 cup vegetables or chicken, diced
  • 5 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 3 tbsp butter
  • Extra ketchup to serve

Method

  1. Fry the onion and whatever protein or vegetables in butter till soft.
  2. Cold rice in, then the ketchup, soy and sugar. Fry hard 4 minutes until the ketchup loses its raw edge and the rice turns orange.
  3. Pack the rice into a bowl, then turn it out onto a plate in a mound.
  4. Omelette: beat 3 eggs, cook on LOW in butter, stirring for 30 seconds, then let the base set while the top stays runny.
  5. Slide it over the rice mound so it drapes and settles.
  6. Ketchup on top. Traditionally a squiggle.

Questions people ask about Omurice

How long does Omurice take?

About 25 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of rice in Omurice?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Omurice ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

What do you serve with Omurice?

Steamed rice and pickles. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
