Chicken Pot Pie

A stew with pastry on top. Cold-night food that feeds five from one dish.

70 min A proper cook Non-vegetarian

Ingredients

  • 600g chicken, cubed
  • 2 carrots, 1 onion, 2 celery sticks, diced
  • 1 cup peas
  • 1 cup mushrooms
  • 4 tbsp butter
  • 4 tbsp maida
  • 2 cups stock
  • 1 cup milk
  • 1 tsp thyme
  • 1 sheet puff pastry
  • 1 egg for glazing

Method

  1. Brown the chicken in butter, take it out. Cook the vegetables in the same pan 8 minutes.
  2. Maida in, cook 2 minutes, then stock and milk added slowly while whisking.
  3. Simmer till thick enough to coat a spoon. Thin filling makes soggy pastry.
  4. Chicken, peas, thyme, salt and pepper. Cool it for 15 minutes — hot filling melts the pastry before it can rise.
  5. Fill the dish, lay the pastry over, trim, and cut two slits in the middle for steam.
  6. Egg wash, 200°C for 30 minutes till deep golden. Rest 10 minutes.

Questions people ask about Chicken Pot Pie

How long does Chicken Pot Pie take?

About 70 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of chicken in Chicken Pot Pie?

Use paneer, firm tofu or mushrooms. All three cook far faster than chicken, so add them in the last 5 minutes rather than at the start.

Can I make Chicken Pot Pie ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Chicken Pot Pie vegetarian?

Yes. Replace the chicken with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.
