Pasta Carbonara

Four ingredients, no cream, and it's over in fifteen minutes if you keep your nerve.

18 min Some work Contains egg

Ingredients

  • 250g spaghetti
  • 3 eggs + 1 yolk
  • 1 cup grated parmesan or any hard cheese
  • 150g bacon, pancetta or mushrooms
  • 2 tsp black pepper, coarsely crushed
  • Salt

Method

  1. Beat the eggs with the cheese and a lot of black pepper into a thick paste. No cream. Ever.
  2. Boil the pasta in well-salted water. Save two mugs of the water.
  3. Crisp the bacon or mushrooms in a wide pan. Take the pan OFF the heat.
  4. Drained pasta into the pan, toss 30 seconds to cool it slightly.
  5. Now the egg mixture, with a splash of pasta water, tossing hard and fast. Off the heat the whole time — on the heat you get scrambled eggs.
  6. More pasta water till it's glossy and coats the strands. Serve immediately.
