Vegetable Frittata

Eggs plus whatever's in the fridge, finished in the oven. Good hot or in tomorrow's lunchbox.

30 min Easy Contains egg

Ingredients

  • 8 eggs
  • 3 cups vegetables (capsicum, onion, spinach, potato, mushroom)
  • 1 cup grated cheese
  • 1/4 cup milk or cream
  • 1 tsp dried herbs
  • Black pepper
  • 2 tbsp butter

Method

  1. Cook the vegetables in an oven-safe pan until any water has evaporated. Wet vegetables make a soggy frittata.
  2. Beat eggs with milk, salt, pepper, herbs and half the cheese.
  3. Pour over the vegetables, stir once, then leave it alone on low for 5 minutes.
  4. Rest of the cheese on top, then into a 180°C oven for 12 minutes — or cover the pan and cook on the lowest flame 12 minutes.
  5. It's done when the centre barely wobbles. Rest 5 minutes, then slice like a cake.

Questions people ask about Vegetable Frittata

How long does Vegetable Frittata take?

About 30 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of eggs in Vegetable Frittata?

Use for binding, 1 tbsp besan whisked with 2 tbsp water per egg. For scrambles, crumbled firm tofu with a pinch of kala namak.

Can I make Vegetable Frittata ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

What do you serve with Vegetable Frittata?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
