Crispy Potato Bake

Potatoes, onions, cream, butter. Four things and it beats anything complicated.

35 min Easy Vegetarian

Ingredients

  • 500g potatoes, boiled and sliced
  • 2 small onions, sliced in rings
  • 200ml cream
  • 100g butter
  • Salt and black pepper

Method

  1. Butter a dish well. Layer potato slices and onion rings, overlapping.
  2. Pour the cream over, season each layer as you go — seasoning only the top leaves the middle bland.
  3. Dot with butter.
  4. 180°C for about 20 minutes, until the top is golden and crisp at the edges.

Questions people ask about Crispy Potato Bake

How long does Crispy Potato Bake take?

About 35 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of potato in Crispy Potato Bake?

Use waxy potatoes hold their shape, floury ones fall apart. For curries you want waxy.

Can I make Crispy Potato Bake ahead of time?

Not really. This one relies on being crisp, and crisp does not survive the fridge. Prepare the components ahead if you like, but cook it just before eating.

Is Crispy Potato Bake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Crispy Potato Bake?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Crispy Potato Bake?

Bread, potatoes or a simple salad. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
