Broccoli Almond Soup

Twenty-five minutes, no cream needed, and the almonds do the thickening.

25 min Easy Vegetarian

Ingredients

  • 1 large head broccoli, florets and peeled stem
  • 1/3 cup almonds or cashews, soaked
  • 1 onion
  • 6 garlic cloves
  • 4 cups stock or water
  • 1 tsp black pepper
  • 2 tbsp butter
  • Lemon
  • Toasted almond slivers

Method

  1. Use the stem too — peel it and chop it. It's sweeter than the florets and most people throw it away.
  2. Soften onion and garlic in butter, 6 minutes.
  3. Broccoli, stock and salt. Boil hard 8 minutes only, uncovered. Longer and it goes army green.
  4. Blend with the soaked nuts until completely smooth.
  5. Back in the pot, thin with hot water, add pepper and lemon.
  6. Toasted almond slivers and olive oil on top.

Questions people ask about Broccoli Almond Soup

How long does Broccoli Almond Soup take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of cashews in Broccoli Almond Soup?

Use blanched almonds or melon seeds, soaked the same way. Almonds grind slightly grainier, so blend longer.

Can I make Broccoli Almond Soup ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Broccoli Almond Soup vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Broccoli Almond Soup?

Bread, potatoes or a simple salad. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
