Carrot Ginger Soup

Four ingredients, one blender, twenty-five minutes. Bright orange and genuinely good.

25 min Easy Vegetarian

Ingredients

  • 6 carrots, chopped
  • 2 inch ginger, chopped
  • 1 onion
  • 4 garlic cloves
  • 1 tsp cumin
  • 1/4 cup cream or coconut milk
  • 1 tbsp butter
  • 1 lemon
  • Black pepper

Method

  1. Soften the onion, garlic and ginger in butter for 6 minutes without browning.
  2. Cumin, then the carrots, salt, and water to just cover — not more, or the soup is thin and dull.
  3. Boil, then simmer 15 minutes till the carrots give way completely.
  4. Blend until absolutely smooth. Blend longer than you think.
  5. Back in the pot with cream, pepper and lemon.
  6. Lemon is what stops it tasting flat and sweet. Bread on the side.

Questions people ask about Carrot Ginger Soup

How long does Carrot Ginger Soup take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Carrot Ginger Soup?

Lemon is what stops it tasting flat and sweet. Bread on the side.

What can I use instead of ginger in Carrot Ginger Soup?

Use 1/2 tsp dry ginger powder per inch of fresh, added with the powdered spices rather than the aromatics.

Can I make Carrot Ginger Soup ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Carrot Ginger Soup vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Carrot Ginger Soup?

Bread on the side. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
