Brazilian Rice

Rice fried in oil with garlic before the water goes in. Every grain separate, no effort.

25 min Easy Vegetarian

Ingredients

  • 2 cups long grain rice, soaked 30 minutes
  • 1 small onion, chopped
  • 1 garlic clove, crushed
  • 3 tbsp oil
  • 2 cups boiling water
  • Salt

Method

  1. Fry the onion and garlic in oil until soft.
  2. Drained rice in. Fry, stirring, until the grains turn translucent at the edges — this is what stops it clumping.
  3. Boiling water and salt. Uncovered, 15 minutes on low.
  4. When the water is gone, cover, off the heat, 5 minutes. Fork it through before serving.

Questions people ask about Brazilian Rice

How long does Brazilian Rice take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Brazilian Rice?

Drained rice in. Fry, stirring, until the grains turn translucent at the edges — this is what stops it clumping.

What can I use instead of rice in Brazilian Rice?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Brazilian Rice ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Brazilian Rice vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Brazilian Rice?

Bread, potatoes or a simple salad. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
