25 min Easy Vegetarian

Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 1/8 tsp nutmeg
  • 1 litre milk
  • 400g asparagus, chopped
  • 2 cups cheddar, grated
  • 1 cup water
  • Salt and pepper

Method

  1. Melt the butter, whisk in the flour, salt, nutmeg and pepper. Take it off the heat before the milk goes in.
  2. Milk in gradually, back on the heat, stirring until it thickens.
  3. Asparagus and a cup of water. Simmer 10 minutes.
  4. Off the heat, then the cheese, stirring until it melts. Boiling it after the cheese goes in makes it grainy.
  5. Leave the asparagus out and you have a straight cheddar soup.

Questions people ask about Asparagus Cheese Soup

How long does Asparagus Cheese Soup take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of cheese in Asparagus Cheese Soup?

Use any hard cheese that melts. Processed cheese melts smoothest, aged cheese tastes better.

Can I make Asparagus Cheese Soup ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Asparagus Cheese Soup vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Asparagus Cheese Soup?

Bread, potatoes or a simple salad. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
