Ingredients

  • 6 tomatoes (or 1 can)
  • 1 onion
  • 4 garlic cloves
  • 1 tbsp butter
  • 1/4 cup cream or milk
  • 1 tsp sugar
  • Bread + cheese + butter for the sandwich

Method

  1. Cook onion, garlic and tomatoes in butter with salt for 15 minutes until completely soft.
  2. Blend smooth, strain if you want it silky. Back in the pot with sugar and cream.
  3. Butter the OUTSIDE of the bread, cheese inside.
  4. Low heat, 4 minutes a side — slow is what melts the cheese without burning the bread.
  5. Cut the sandwich into fingers for dipping.

Questions people ask about Tomato Soup + Grilled Cheese

How long does Tomato Soup + Grilled Cheese take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of tomato in Tomato Soup + Grilled Cheese?

Use canned chopped tomatoes, roughly 1 can per 4 fresh. Add a pinch of sugar to offset the acidity.

Can I make Tomato Soup + Grilled Cheese ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Tomato Soup + Grilled Cheese vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Tomato Soup + Grilled Cheese?

Bread, potatoes or a simple salad. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
