Creamy Chilli Spaghetti

Milk, tomato and green chillies on spaghetti. Not Italian, and better for it.

30 min Some work Vegetarian

Ingredients

  • 250g spaghetti
  • 2 onions, chopped
  • 4 tomatoes, chopped
  • 1 cup milk
  • 4 green chillies, chopped
  • 6 tbsp ketchup
  • 50g butter
  • 1 cup cheddar, grated
  • 2 tbsp chilli sauce
  • 1/4 cup coriander leaves
  • Salt and pepper

Method

  1. Boil the spaghetti in properly salted water, drain, keep a cup of the water.
  2. Soften the onions, add tomatoes and cook until they collapse.
  3. Milk in, then the spaghetti. When it comes back to a boil, everything else goes in.
  4. Low heat 8-10 minutes, stirring — the milk should thicken and coat, not sit in a pool. Splash in pasta water if it tightens too far.
  5. Off the heat, covered, 5 minutes. Cheese and coriander on top.

Questions people ask about Creamy Chilli Spaghetti

How long does Creamy Chilli Spaghetti take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of pasta in Creamy Chilli Spaghetti?

Use any short shape holds sauce better than long; cooking time changes, so go by the packet.

Can I make Creamy Chilli Spaghetti ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Creamy Chilli Spaghetti vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Creamy Chilli Spaghetti?

On its own as a main, or with fried rice or noodles. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
