Creamed Cabbage Bake

White sauce, cheddar and cabbage in the oven. Nobody guesses it's cabbage.

45 min Some work Vegetarian

Ingredients

  • 1 cabbage, shredded
  • 1 cup cheddar, grated
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/4 cups milk
  • 2 tbsp onion, minced
  • 1 tbsp parsley
  • 1/3 cup breadcrumbs
  • Paprika

Method

  1. Boil the cabbage in salted water just until it gives — still crisp. Drain it properly or the bake goes watery.
  2. Layer cabbage and cheese in a greased dish.
  3. White sauce: melt butter, cook the flour in it for a minute, then milk in slowly, whisking. Salt, paprika, onion, parsley.
  4. Pour over, scatter breadcrumbs.
  5. 180°C, 15-20 minutes, until the top browns and the edges bubble.

Questions people ask about Creamed Cabbage Bake

How long does Creamed Cabbage Bake take?

About 45 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of cheese in Creamed Cabbage Bake?

Use any hard cheese that melts. Processed cheese melts smoothest, aged cheese tastes better.

Can I make Creamed Cabbage Bake ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Creamed Cabbage Bake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Creamed Cabbage Bake?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Creamed Cabbage Bake?

Bread, potatoes or a simple salad. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
