Buddha Bowl

Roast a tray, cook a grain, whisk a dressing. Everything can be made ahead.

40 min Easy Vegetarian

Ingredients

  • 2 sweet potatoes, cubed
  • 1 can chickpeas, drained
  • 1 head broccoli
  • 2 cups cooked rice or quinoa
  • Dressing: 3 tbsp tahini or curd, 1 lemon, 1 garlic clove, 1 tsp honey, water
  • Cucumber, red onion, avocado
  • 2 tsp paprika, 1 tsp cumin
  • Olive oil
  • Seeds

Method

  1. Dry the chickpeas thoroughly, then toss with sweet potato, olive oil, paprika, cumin and salt.
  2. Spread on a tray in ONE layer with space between everything. Crowded trays steam instead of roasting.
  3. 200°C for 25 minutes, broccoli added for the last 12.
  4. Dressing: whisk tahini or curd with lemon, crushed garlic, honey and salt, thinning with water until it pours.
  5. Build in sections rather than mixing: grain, roasted things, then raw cucumber, onion and avocado.
  6. Dressing over, seeds on top.

Questions people ask about Buddha Bowl

How long does Buddha Bowl take?

About 40 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of chickpeas in Buddha Bowl?

Use canned is fine and saves an hour; rinse them well, the canning liquid tastes metallic.

Can I make Buddha Bowl ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Buddha Bowl vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Buddha Bowl?

Bread, potatoes or a simple salad. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
