Thai Curry Paste

Made once, it beats every jar. Red or green depending on what goes in.

25 min Some work Vegetarian

Ingredients

  • 7-10 dried red chillies for red curry
  • 2 tsp caraway seeds
  • 1 tsp coriander seeds
  • 1 tsp salt
  • 2 tbsp lemongrass, chopped
  • 1 tsp galangal, chopped
  • 2 tsp shallots, chopped
  • 1 tsp garlic, chopped
  • A bunch of basil and 2 tbsp coriander leaves for green curry

Method

  1. Dry-roast the caraway and coriander seeds with no oil until fragrant, then cool and pound them.
  2. Seed the chillies, soak them in cold water, then pound them fine with the salt.
  3. Add lemongrass, galangal, shallots and garlic. Pound until it's a genuinely smooth paste — a rough paste makes a gritty curry.
  4. Mix in the roasted powder last.
  5. For green curry, use fresh green chillies with basil and coriander instead of the dried red ones.

Questions people ask about Thai Curry Paste

How long does Thai Curry Paste take?

About 25 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of garlic in Thai Curry Paste?

Use 1/4 tsp garlic powder per clove at a push, added later so it does not scorch.

Can I make Thai Curry Paste ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Thai Curry Paste vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

How long does home-made thai curry paste keep?

Depends what it is: pastes and stocks keep a few days refrigerated or months frozen in portions; dry mixes keep for months in a sealed jar.
