Tehri

Turmeric-yellow one-pot rice with whatever vegetables you have. Thirty minutes.

30 min Easy Vegetarian

Ingredients

  • 1.5 cups rice, soaked
  • 2 potatoes, cubed
  • 2 cups mixed vegetables
  • 2 onions, sliced
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Whole spices
  • 4 tbsp mustard oil

Method

  1. Heat the mustard oil till it smokes, then cool slightly.
  2. Whole spices, then onions fried till properly brown — that colour carries the whole dish.
  3. Ginger-garlic, potatoes and vegetables, turmeric, coriander powder, salt. Fry 5 minutes.
  4. Drained rice folded in for 2 minutes.
  5. 3 cups water. Boil hard uncovered till the water drops to the rice, then cover and go to the lowest flame 12 minutes.
  6. Rest 10 minutes. Curd and pickle.

Questions people ask about Tehri

How long does Tehri take?

About 30 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of rice in Tehri?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Tehri ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Tehri vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Tehri?

Curd and pickle. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
