  1. Filling: sattu with onion, garlic, chillies, pickle masala, ajwain, mustard oil, lemon and salt. Add water a few drops at a time — it should just clump, never turn into a paste.
  2. Soft atta dough, rested 15 minutes.

  5. Serve with chokha, curd, or just raw onion and pickle.

Questions people ask about Sattu Paratha

How long does Sattu Paratha take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Sattu Paratha?

Filling: sattu with onion, garlic, chillies, pickle masala, ajwain, mustard oil, lemon and salt. Add water a few drops at a time — it should just clump, never turn into a paste.

What can I use instead of atta in Sattu Paratha?

Use plain flour, though the dough will be softer and need less water.

Can I make Sattu Paratha ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Sattu Paratha vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Sattu Paratha?

Serve with chokha, curd, or just raw onion and pickle. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
