Whole spices bloomed in oil and saffron milk poured over at the end.

30 min Easy Vegetarian

Ingredients

  • 1 1/2 cups long grain rice, rinsed
  • 2 tbsp oil
  • 1 stick cinnamon
  • 7 cloves
  • 5 cardamom pods
  • 1/4 tsp saffron, crumbled
  • 2 tsp milk
  • 2 3/4 cups water
  • 1 tsp salt

Method

  1. Fry the cinnamon, cloves and cardamom in the oil for 30 seconds until they smell awake.
  2. Rice in, stir a minute.
  3. Water and salt, bring to a boil, cover, 15 minutes on low.
  4. Warm the saffron in the milk and dribble it over in streaks — don't stir it in, you want yellow and white grains together.
  5. Five more minutes covered, then rest 5 off the heat.

Questions people ask about Saffron Rice

How long does Saffron Rice take?

About 30 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Saffron Rice?

Warm the saffron in the milk and dribble it over in streaks — don't stir it in, you want yellow and white grains together.

What can I use instead of rice in Saffron Rice?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Saffron Rice ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Saffron Rice vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Saffron Rice?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
