Pindi Chole

Dark, dry and tangy — no tomatoes, no onions, nothing like everyday chole.

45 min Some work Vegetarian

Ingredients

  • 2 cups chickpeas, soaked overnight
  • 3 tea bags
  • 2 tbsp anardana or 1 tbsp amchur
  • 2 tsp roasted cumin powder
  • 1 tbsp coriander powder
  • 1 tsp black salt
  • 1 tsp garam masala
  • 1 inch ginger, juliennes
  • Green chillies
  • 3 tbsp ghee

Method

  1. Pressure cook the chickpeas with tea bags, salt and a pinch of soda — 6 whistles. The tea gives the black colour, not the spices.
  2. Discard the tea bags, drain, keep some water.
  3. Dry roast the cumin and coriander powders till they smell strong.
  4. Ghee in a wide pan, chickpeas in, then all the powders and anardana.
  5. Fry hard on medium 10 minutes so they dry out and darken. This is a dry dish, not a gravy.
  6. Ginger juliennes, slit chillies, lemon. Bhature or kulcha.

Questions people ask about Pindi Chole

How long does Pindi Chole take?

About 45 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of chickpeas in Pindi Chole?

Use canned is fine and saves an hour; rinse them well, the canning liquid tastes metallic.

Can I make Pindi Chole ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Pindi Chole vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need a pressure cooker for Pindi Chole?

A cooker is faster but not essential. In an open pot, expect roughly three times the cooking time and keep an eye on the water level, topping up with hot water rather than cold.

What do you serve with Pindi Chole?

Roti or naan, with curd and pickle. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
