Missi Roti

Besan in the dough makes it richer and more filling than a plain roti.

30 min Some work Vegetarian

Ingredients

  • 1.5 cups atta
  • 1 cup besan
  • 1 onion, very finely chopped
  • 2 green chillies
  • 1 tsp ajwain
  • 1 tsp kasuri methi
  • 1/2 tsp turmeric
  • 1 tsp red chilli powder
  • Coriander
  • Ghee

Method

  1. Mix both flours with onion, chillies, ajwain, crushed kasuri methi, spices, salt and 2 tbsp ghee.
  2. Add water slowly. Besan absorbs less than atta, so the dough comes together faster than you expect.
  3. Rest 20 minutes covered — this is what stops it cracking at the edges when rolled.
  4. Roll thicker than a roti, about 3mm.
  5. Hot tawa, cook both sides, then ghee and press with a cloth till brown spots appear.
  6. White butter, curd, pickle.

Questions people ask about Missi Roti

How long does Missi Roti take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Missi Roti?

Rest 20 minutes covered — this is what stops it cracking at the edges when rolled.

What can I use instead of atta in Missi Roti?

Can I make Missi Roti ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

White butter, curd, pickle. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
