Paneer Paratha

Higher protein than aloo, and it holds together more easily.

35 min Some work Vegetarian

Ingredients

  • 2 cups atta
  • 300g paneer, grated
  • 1 onion, very finely chopped
  • 2 green chillies
  • 1 tsp chaat masala
  • 1/2 tsp garam masala
  • 1 tsp kasuri methi
  • Coriander
  • Ghee

Method

  1. Grate the paneer rather than crumbling it — fine grating means no lumps that tear the dough.
  2. Mix with onion, chillies, chaat masala, garam masala, crushed kasuri methi, salt and coriander.
  3. Soft dough, rested 20 minutes.
  4. Stuff generously, seal, flatten, roll gently.
  5. Hot tawa with ghee, 2 minutes a side.
  6. White butter on top. Curd and pickle.

Questions people ask about Paneer Paratha

How long does Paneer Paratha take?

About 35 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of atta in Paneer Paratha?

Use plain flour, though the dough will be softer and need less water.

Can I make Paneer Paratha ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Paneer Paratha vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Paneer Paratha?

Curd and pickle. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
